This knife is based off a Chinese style vegetable cleaver, designed to be used to slice meat and vegetables rather than cleave meat joints. It has been finished with an S-grind (which is a hollow grind both sides of the knife, approx. 10mm above the cutting edge) which gives a glorious performance and exceptional food release.
The handle is stabilised macadamia, sculpted to hold the users hand comfortably during use. Despite the larger blade, the balance is only a whisker off centre.
Blade dimensions are: 65mm at the heel, 150mm long blade and 280mm overall
