This large chef knife is hand forged from 80crv2 high carbon steel, designed with a rolling blade with pleanty of heft. With a razor sharp cutting edge, it carries plenty of heft in the blade that helps ease the pressure on the users wrist, with outstanding cutting performance on hard root vegetables, meat and processing large volumes of food at a time. 

 

It comes with a sculpted beefwood handle that provides an excellent grip and a bronze bolster cast from recycled materials that has been peened and polished for a little extra bling. This acts as a step down for the users hand, allowing for a comfortable "pinch grip" if that is the users preferred way of holding. 

The sheath is made from silky oak and is custom fitted to the knife, staying securely in place using friction at the neck of the blade, keeping the cutting edge safe between uses. 

 

The dimensions are: 220mm long, 53mm high and 365mm overall. It is 5.5mm thick at the neck, tapering to approx. 2.2mm at the tip. 

 

Please note that this is a high carbon steel knife, which means it must be stored completely dry or it may develop excessive patina or rust. This is most easily done by wiping down the knife with a damp cloth after using, then drying it completely before putting it away. The is the small trade off for an incredibly durable steel that stays sharp for a long time and is easily resharpened when the time comes.
