This knife is forged from 15n20 high carbon steel, with a brass bolster cast from reclaimed materials and a handle of superbly durable linen micarta.

Based on the Japanese nakiri, the blade is an alternative design to the traditional chef’s knife, with a gentle curve to the cutting edge to allow the user to perform push/ pull cuts with precision, as well as just enough of a belly for rolling cuts when dicing. The handle is a synthetic micarta, which is linen compressed with epoxy to create a highly durable material to stand the test of time. This is offset by the softer bronze bolster and brass pins, giving the knife a warmer feel and adding ballast to the handle and evenly balancing the knife.

This knife is a great all-rounder and recommended for any home or professional kitchen, whether it’s your first custom knife or an addition to a chef’s knife roll.

 

Like all knives I make, the blade is heat treated in a temperature controlled kiln to optimize hardness, toughness and carbide formation to ensure the steel can perform to the maximum of it’s capabilities! This helps guarantee an excellent cutting edge and highly durable blade that is designed to perform with joy and durability over years of use.

 

The dimensions of the blade are 170mm from heel to point, 42mm deep at the heel and 305mm overall.
